Ingredients: 1 cup cooked sweet potato, 1 medium banana, 2 eggs, 1/4 cup oil, 2 cups ground almonds, 2 tsp baking powder, 1 tsp cinnamon, 1 tsp vanilla, 3 tbsp maple syrup 

Preheat oven to 360 degrees. Mash sweet potato and banana in large bowl. Add eggs, oil, vanilla, and syrup, and mix well. Add the remaining dry ingredients. Grease a muffin tray and add batter. Bake at 360 degrees for 20-25 minutes, but check at the 15 minute mark. The muffins are done when they are springy in the center when pressed! 

  1. Baby Yogurt Melts (from My Kids Lick The Bowl)

Ingredients: 1 cup Greek yogurt, 1/4 pear, 1/4 cup raspberries 

Mix 1/4 cup of the Greek yogurt in a blender with the fruit until well combined. Add the remaining 3/4 cup yogurt and mix with a spoon. Pour the mixture into a piping bag or plastic bag with the corner cut off. Pipe small buttons onto a plate or baking tray lined with parchment paper, and freeze for at least one hour. Transfer the yogurt drops into an airtight container and store in the freezer! 

  1. Mexican Egg And Cheese Quesadillas (from Weelicious)

Ingredients: 4 large eggs, 1/2 tsp salt, 1 tbsp chopped cilantro, 1 tsp oil, 1/4 cup black beans (drained and rinsed), 1/2 cup cheese (grated), 2 tortillas 

Whisk the eggs and salt in a bowl and add the cilantro. Put the oil in a pan and turn to medium heat. Pour half the egg mixture into the pan and cook for 20 seconds. Sprinkle the beans on top and cook for another 20 seconds. Sprinkle a little cheese on top and place one tortilla on top. Flip the tortilla and egg onto a plate, tortilla side down. Slide the omelette back onto the pan, tortilla side down. Sprinkle the top with cheese, and place the second tortilla on top. Cook for one minute, and then flip over and cook for another 30 seconds, or until each side is browned and the cheese is melted. Cut into wedges and serve! 

  1. Strawberry Yogurt Ice Pops (from Weelicious)

Ingredients: 3/4 cup milk, 1 1/2 cup Greek yogurt, 1 1/2 cup diced strawberries, 3 tbsp honey 

Combine all ingredients in a blender until smooth. Place a strawberry slice at the bottom of each popsicle mold, then fill each mold with the fruit mixture. Freeze for at least 4-6 hours before serving.

If you don’t have time for cooking, here are some great snacks to have on hand for your kids: 

Some simple snacks include pretzels, cheese crackers, veggie straws, string cheese, apples, bananas, blueberries, pears, peas, yogurt, hard boiled eggs, cereal, granola bars, yogurt melts, freeze dried vegetables, and frozen waffles. Snack time doesn’t have to be complicated- you can even create a snack board for your child’s meal! Serve them lots of options, but in small amounts.
